During the middle of the past century - when our company was just starting - in our hometown of Zaachila, Oaxaca we received knowledge from our ancestors of how to make chocolate by grounding cocoa on a metate (a flat stone used for grinding), over hot carbon embers. The heat allowed the cocoa, which had been previously toasted and drained and mixed with cinnamon, almonds and sugar, to be converted into a delicious, nutritious and energetic food product called chocolate.

 

The elaboration of this product has provided us with the opportunity to sell it, especially to people travelling to Mexico City. In 1981, we moved into the Abasto market in the city of Oaxaca, under the registered company name “Molinos y Productos Zaachila 1º”, on behalf of the community where we were born and where we learned how to make both chocolate and mole paste, with a special emphasis on Black Mole, which originates from this area.

 

The art of making mole paste emerged from knowledge that has been passed down over the years and put into practice, with an added personal touch.

 

Alimentos Zaapri S de RL MI emerged in 2009 as a result of the continuous improvement (and a new company name), offering products under the trademark of Zaadxil, which, in our zapotec language, means Zaachila. Experience and the use of top quality raw materials in the development of our products allow us to be unsurpassable and well acknowledged in the market.
