MOLE is a term that designates countless complex stews made with a thick sauce. The word MOLE comes from the Náhuatl molli, which means mixture (sauce or stew).

 

Throughout all of the Mexican Republic moles of different colors, flavours and textures are made, with BLACK MOLE being the most characteristic of the state of OAXACA.
